“MAGNUM” ICE CREAM BARS (GF, Vegan, Raw, Sugar-free, Soy-free)

Equipment Needed:

-Ice Cream Mold

-Blender

-Mixing Bowl

-Whisk

 

Prep Time: 15 minutes

Total Time: 12 hours (includes  soaking and freezing time)

Yield: 8-12 servings

 

Filling Nutrients:                                                             

1 cup cashews, soaked for 4-6 hours or overnight

13-14 oz or 1 can of coconut cream

1/3 cup (60ml) maple syrup/coconut or date nectar

Note:

Use 6-8 dates instead of maple syrup for an even healthier ice cream.

Caramel Nutrients:

10-12 large dates, pitted (Medjool are best)

1/3 cup of tahini or coconut cream

2-4 Tbsp coconut oil (raw, cold-pressed)

Pinch of Pink Himalayan Salt (optional)

 

Chocolate Nutrients:

1 cup cacao powder

1 cup coconut oil

½ cup maple syrup/coconut or date nectar

 

Extras:

  • Buckwheat groats (Love using Lil Bucks sprouted cereal)
  • Nuts and seeds, chopped up

 

Instructions:

  1. Rinse and soak the cashews for at least 4-6 hours or overnight. Discard the soaking water and rinse the cashews again (using filtered water is best)
  2. Blend all of the Caramel ingredients first. Spread the caramel on the bottom of the ice cream molds.
  3. Blend all the Filling Ingredients. Pour the filling over the caramel. Insert your wood craft sticks into the ice cream mold. Set the ice cream in the freezer for 4-6 hours.
  4. Whisk together all the Chocolate ingredients in a mixing bowl. Add in the Extras (optional).
  5. Remove your ice cream bars from the mold and dip in the chocolate. Place the bars on a tray lined with parchment paper and place in the freezer for 5-10 minutes. ENJOY!

Ice cream bars will keep in the freezer for up to a year! (if they last that long 😊)

 

Experiment – use natural colorants to lend color to your ice cream:

  • Turmeric for yellow
  • Carrot/carrot juice for orange
  • Blueberries, blackberries for purple
  • Spinach/spirulina for green
  • Pitaya powder for pink
  • Beet powder for red
  • Activated Charcoal for black
