Most dishes contain up to 3 cups worth of food including whole grains, legumes or other plant protein, and vegetables. In this plan we use both raw and cooked ingredients. Legumes and certain grains are pre-soaked and, in many cases, sprouted to ensure highest enzymic content to help with digestion.
We use seasonal foods and cooking techniques to ensure maximum unity with nature and its cycles. During the cold time of the year we use more of heavier foods, with a large of amount of winter squashes, more warming spices such as black pepper, cardamom, cinnamon, allspice. During the warm time of the year you will see more of salads and other refreshing and revitalizing dishes, although for this plan it is rarely just a salad, most of the time it will be a combination of vegetables and other denser foods such as grains, legumes, nuts and seeds.
